Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works β- Step 1
Grate cucumber and squeeze out excess moisture using a clean kitchen towel; set aside.
- Step 2
Mince 2 garlic cloves and chop fresh mint and dill finely.
- Step 3
In a bowl, combine Greek yoghurt with grated cucumber, minced garlic, mint, dill, and juice of half the lemon; season with salt and set tzatziki aside.
- Step 4
In another bowl, combine lamb mince with ground cumin, ground coriander, finely minced remaining garlic clove, salt, and 15ml olive oil.
- Step 5
Form lamb mixture into 8 small kofta-style patties.
- Step 6
Heat remaining olive oil in a non-stick pan over medium-high heat; cook kofta for 3β4 minutes per side until cooked through and lightly browned.
- Step 7
Warm farro gently in a small pan with 30ml water and a pinch of salt.
- Step 8
Divide farro between two bowls.
- Step 9
Top each bowl with 4 kofta and a generous dollop of tzatziki.
- Step 10
Juice remaining half lemon over bowls and serve immediately.
