Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works →- Step 1
Preheat oven to 200°C (180°C fan/Gas Mark 6).
- Step 2
Boil the potatoes and parsnips together in salted water until very tender (about 15-20 minutes).
- Step 3
While boiling, prepare the filling: Sauté the onion, carrots, and celery in a large saucepan with a little oil until softened (about 8 minutes).
- Step 4
Stir in the tomato purée and thyme, cooking for 1 minute.
- Step 5
Add the dried lentils, vegetable stock (made up to 400ml with hot water), and vegetarian Worcestershire sauce. Bring to a simmer, cover, and cook for 25-30 minutes, or until lentils are tender and most liquid is absorbed, stirring occasionally.
- Step 6
Drain the parsnips and potatoes well. Mash thoroughly with the milk, butter/oil, salt, and pepper until smooth.
- Step 7
Transfer the lentil mixture to an ovenproof dish (or keep in the saucepan if it is oven-safe). Season the top layer of the mash.
- Step 8
Bake for 15 minutes, or until the topping is golden brown and the filling is bubbling hot. Serve immediately.
