Shop these in one order
Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works →- Step 1
Wash the collard greens thoroughly and remove the tough stems. Chop the leaves into bite-sized pieces.
- Step 2
Finely chop the red onion. Mince the garlic.
- Step 3
Heat the vegetable oil in a large frying pan or pot over medium heat.
- Step 4
Add the chopped onion and cook for 5-7 minutes until softened.
- Step 5
Add the minced garlic and cook for 1 minute until fragrant.
- Step 6
Add the chopped collard greens to the pan. They will seem like a lot, but will wilt down.
- Step 7
Stir in the canned chopped tomatoes and vegetable stock.
- Step 8
Cover and simmer for 10-15 minutes, or until the greens are tender but still vibrant green. Stir occasionally.
- Step 9
Season with salt and black pepper to taste.
- Step 10
While the greens are cooking, prepare the ugali: Bring 500ml of water to a boil in a medium saucepan.
- Step 11
Gradually whisk in the maize meal, a little at a time, until all the meal is incorporated and there are no lumps.
- Step 12
Reduce the heat to low and continue to stir vigorously with a wooden spoon for 5-10 minutes, until the ugali is thick and pulls away from the sides of the pan.
- Step 13
Serve the Sukuma Wiki hot alongside the freshly made Ugali.
