Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works →- Step 1
Preheat your grill or oven to 200°C (180°C fan/Gas Mark 6).
- Step 2
Place the whole red bell peppers directly under a hot grill or on a baking tray in the oven. Roast, turning occasionally, until the skins are blackened and blistered all over (about 20-25 minutes).
- Step 3
Once roasted, place the peppers in a bowl and cover tightly with cling film. Let them steam for 10-15 minutes. This will make them easier to peel.
- Step 4
While the peppers are steaming, drain and rinse the cannellini beans. Place them in a medium bowl.
- Step 5
Once the peppers are cool enough to handle, peel off the blackened skins, remove the seeds and membranes, and roughly chop the flesh.
- Step 6
Add the chopped roasted red peppers to the bowl with the cannellini beans. Add 2 tablespoons of olive oil, the balsamic vinegar, half of the chopped basil, salt, and pepper. Gently mash some of the beans with a fork to create a slightly chunky texture.
- Step 7
Toast the ciabatta slices until golden brown and crisp. You can do this under the grill, in a toaster, or in a dry frying pan.
- Step 8
Rub each slice of toasted bread with a whole garlic clove.
- Step 9
Spoon the cannellini bean and roasted red pepper mixture generously onto the toasted ciabatta slices.
- Step 10
Drizzle with a little extra olive oil and scatter the remaining chopped fresh basil over the top.
- Step 11
Serve immediately.
