
Salt and Pepper Jacket Potato
Oven-baked jacket potatoes stuffed with Chinese five-spice butter, peppers and onion, then finished with a chilli-crisp drizzle and cheese.
- 2 pc baking potatoes
- ½ pc red pepper
- ½ pc yellow pepper
- ½ pc red onion
- 1 tsp Chinese five spice
- 2 pc garlic
- 50 g salted butter
- honey
- maple syrup
- 1 pc cheddar cheese
- 2 pc spring onion
- 2 tbsp crème fraîche
- 1 tsp chilli crisp oil
- olive oil
- salt
- black pepper

Preheat the oven to 200°C/400°F. Pierce the potatoes all over with a fork and rub with olive oil, salt and pepper, then bake on a tray for around 1 hour until tender all the way through.

When the potato is almost finished baking, preheat a frying pan over medium-high heat and pour in a splash of olive oil. Fry the onion, garlic and peppers for 2–3 minutes, then add the maple/honey and half of the Chinese five spice, and season with salt and pepper. Leave to cook for a few more minutes.
- Step 3
While that fries, mix together the remaining five spice and the softened salted butter. When the potato is cooked, cut a cross in the top and push it up from the bottom to open up the top, then mix in plenty of the five-spice butter. Add in the cheese, then top with the vegetable stir-fry, plus a bit more cheese on top. Pop back in the oven for 10–15 minutes to melt the cheese.

Mix together the crème fraîche (or sour cream) with the chilli crisp oil, then drizzle all over the potatoes when they come out of the oven. Sprinkle over the chopped spring onions and serve.
