Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works →- Step 1
Preheat oven to 220°C (200°C fan/Gas Mark 7).
- Step 2
Cook the quinoa: Rinse the quinoa well. Combine with 240ml of water in a saucepan. Bring to a boil, cover, reduce heat to low, and simmer for 15 minutes until all water is absorbed. Fluff with a fork.
- Step 3
Prepare the vegetables: Peel and chop the carrots and parsnips into 2cm chunks. Cut the red onion into thick wedges.
- Step 4
In a large bowl, toss the root vegetables and onion with 20ml of olive oil, smoked paprika, cumin, salt, and pepper. Spread onto a large baking tray.
- Step 5
Roast for 30-35 minutes, turning halfway, until tender and slightly caramelised.
- Step 6
Prepare the tahini drizzle: Whisk the tahini paste, maple syrup, lemon juice, and 30ml of water together until smooth and pourable. Add more water if necessary to reach a thin drizzling consistency.
- Step 7
Assemble the bowls: Divide the cooked quinoa between two bowls. Top with the hot roasted vegetables.
- Step 8
Garnish generously with fresh coriander and drizzle liberally with the tahini sauce.
