Shop these in one order
Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works →- Step 1
Prepare the Raita: Finely chop the mint. Mix the yogurt, a pinch of salt, and the chopped mint together in a small bowl. Chill until serving.
- Step 2
Prepare the Bhaji Mix: Finely slice the onions and roughly chop the spinach. Finely chop the green chillies (remove seeds for less heat).
- Step 3
In a large bowl, combine the gram flour, plain flour, cumin, coriander, turmeric, salt, and pepper.
- Step 4
Add the sliced onion, spinach, and chillies to the dry ingredients. Mix well to coat.
- Step 5
Slowly add about 100ml of cold water, mixing until you have a thick, slightly sticky batter that coats the vegetables well. Do not overmix.
- Step 6
Cut the paneer into 1cm cubes. Gently fold the paneer cubes into the batter.
- Step 7
Heat the vegetable oil in a deep, heavy-bottomed pan or deep fryer to 170°C. (If using a pan, ensure oil is deep enough to cover the bhajis).
- Step 8
Carefully drop spoonfuls of the mixture into the hot oil, ensuring not to overcrowd the pan (work in batches).
- Step 9
Fry for 4-6 minutes, turning occasionally, until deep golden brown and cooked through. Remove with a slotted spoon and drain on kitchen paper.
- Step 10
Serve the hot paneer bhajis immediately with the chilled tangy raita on the side.
