
Arepas (Colombian corn arepas)
Simple Colombian-style arepas made from cornmeal, cooked until crisp and ready for toppings or fillings.
- 200 g cornmeal
- 360 ml water
- salt
- 1 tbsp oil
- 50 g cheddar cheese

Mix the cornmeal with the salt in a bowl.

Gradually add the water while mixing until you have a soft, pliable dough (add a splash more water if it feels too dry).
- Step 3
Divide the dough into 4 equal portions and shape into flat discs about 1 cm thick.
- Step 4
Heat a non-stick frying pan over medium heat and lightly oil it.
- Step 5
Cook the arepas for 4–5 minutes per side until browned and cooked through.
- Step 6
If serving stuffed, press a little cheese into the centre before shaping, then cook as above until the cheese melts.
