Shop these in one order
Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works →- Step 1
Preheat oven to 200°C. Dice plum tomatoes, thinly slice red onion, mince garlic, and roughly chop black olives.
- Step 2
Cut two large sheets of parchment paper (approximately 30cm x 40cm each). Fold each in half to create a crease, then open out flat.
- Step 3
Divide diced tomatoes, sliced onion, olives and minced garlic between the two parchment sheets, placing the mixture on one half of each sheet.
- Step 4
Place a fish fillet on top of each vegetable mixture. Season with salt and pepper. Drizzle each fillet with 20ml olive oil and 30ml white wine. Top each with 2 thyme sprigs and 6 basil leaves. Squeeze lemon juice over.
- Step 5
Fold the parchment paper over the fish to create a sealed parcel. Fold the edges tightly to seal completely, creating a tight envelope.
- Step 6
Place parcels on a baking tray and bake for 15 minutes until the parchment puffs up slightly and the fish is cooked through (the parcel will steam the fish gently).
- Step 7
Carefully open parcels at the table (watch for steam) and serve directly in the parchment, or transfer to plates. Spoon the tomato-olive mixture and cooking juices over the fish.
