Shop these in one order
Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works →- Step 1
Cook basmati rice in salted boiling water for 15 minutes until tender; drain and set aside.
- Step 2
Dice chicken into 3cm chunks. Mix yoghurt, ginger paste, 1 tsp garam masala, cumin, and salt; coat chicken and marinate for 10 minutes.
- Step 3
Heat 30ml oil in a large frying pan over high heat. Fry chicken in batches for 3–4 minutes per side until golden; remove and set aside.
- Step 4
In the same pan, add remaining 30ml oil. Fry diced onion for 5 minutes until softened; add minced garlic and fry for 1 minute.
- Step 5
Stir in paprika and remaining garam masala; cook for 30 seconds until fragrant.
- Step 6
Pour in passata and bring to a simmer. Return chicken to pan, reduce heat to medium-low, and simmer for 12 minutes until sauce thickens slightly.
- Step 7
Stir in double cream and simmer for 2 minutes. Taste and adjust seasoning.
- Step 8
Meanwhile, toss okra with 15ml oil, salt, and pepper. Heat a separate frying pan over high heat and fry okra for 6–8 minutes, stirring frequently, until charred and tender.
- Step 9
Serve butter chicken over basmati rice with charred okra on the side. Garnish with fresh coriander.
