Add to a shopping listHow the shopping list works →- Step 1
Toast walnuts in a dry frying pan over medium heat for 2 minutes until fragrant. Remove and set aside. In the same pan, toast coriander and cumin seeds for 1 minute, then add sesame seeds and toast for 30 seconds. Grind coarsely in a pestle and mortar with a pinch of salt. Mix with toasted walnuts to create dukkah.
- Step 2
Make tahini dressing: whisk tahini, lemon juice, minced garlic, 30ml olive oil and 30ml warm water until smooth and pourable. Season with salt.
- Step 3
Slice courgettes lengthwise into 5mm planks. Brush both sides with 15ml olive oil and season with salt. Heat a griddle pan or grill to high heat. Grill courgettes for 3 minutes per side until charred with grill marks.
- Step 4
Slice halloumi into 8mm thick slices. Grill for 2 minutes per side until golden and slightly softened but still holding its shape.
- Step 5
Arrange charred courgettes on two plates. Top with grilled halloumi. Drizzle tahini dressing around the plate. Sprinkle walnut dukkah generously over the top. Tear fresh mint over and serve immediately.
