Shop these in one order
Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works →- Step 1
Preheat oven to 220°C (200°C fan/Gas Mark 7). Line a large baking tray with parchment paper.
- Step 2
Prepare the cauliflower: Trim the outer leaves of the cauliflower. Carefully slice the cauliflower head vertically into 4 thick 'steaks' (about 2.5cm thick) from the core. If the outer pieces break off, save them for roasting alongside the steaks.
- Step 3
Make the harissa marinade: In a small bowl, whisk together 30ml olive oil, the harissa paste, cumin seeds, salt, and pepper.
- Step 4
Coat the steaks: Brush the harissa mixture generously over both sides of the cauliflower steaks, ensuring good coverage. Place on the prepared baking tray.
- Step 5
Roast: Roast for 25-30 minutes, flipping halfway through, until the edges are deeply caramelized and the cauliflower is tender when pierced with a fork.
- Step 6
Prepare the tahini yogurt: While roasting, whisk together the tahini paste, Greek-style yogurt, the juice of half the lemon, a pinch of sugar, and 20ml of water until smooth and pourable. Season with salt.
- Step 7
Serve: Drizzle the tahini yogurt generously over the hot cauliflower steaks. Garnish with fresh chopped coriander and serve immediately.
