Shop these in one order
Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works →- Step 1
Warm the light olive oil in a large pan and soften the diced onion, carrot and celery for 8 minutes.
- Step 2
Add the crushed garlic and cumin and stir for 60 seconds.
- Step 3
Add the lentils, barley and stock. Bring to a boil, then drop to a gentle simmer and cook uncovered for 35-40 minutes, until the barley is tender and the soup has thickened.
- Step 4
Season well. Stir in the lemon juice off the heat.
- Step 5
Ladle into bowls, scatter with parsley, and finish each with a generous spoonful of the raw extra-virgin olive oil.
