Add to a shopping listHow the shopping list works →- Step 1
Dice 100 g onion finely for the curry base. Slice remaining 100 g onion thinly for crispy garnish. Mince garlic and ginger.
- Step 2
Heat 30 ml oil in a large frying pan over medium-high heat. Add sliced onions and cook for 8-10 minutes, stirring occasionally, until golden and crispy. Transfer to paper towels and set aside.
- Step 3
In the same pan, add remaining 30 ml oil. Add diced onion and cook for 3 minutes until softened. Add garlic and ginger, cook for 1 minute until fragrant.
- Step 4
Stir in cumin, coriander, and turmeric. Toast spices for 1 minute, stirring constantly to prevent burning.
- Step 5
Drain and rinse chickpeas. Add to pan and stir to coat with spices. Cook for 2 minutes.
- Step 6
Pour in coconut milk and bring to a simmer. Cook for 8 minutes, stirring occasionally. The sauce should reduce slightly and thicken.
- Step 7
Add fresh spinach in batches, stirring until wilted (about 3-4 minutes total). Season with salt and squeeze of lime juice.
- Step 8
Divide curry between two bowls. Top with crispy onions and serve with basmati rice or flatbread.
