
Viral Dot Cake
A lemon olive oil cake topped with silky mascarpone cream and finished with sprinkles, pistachios, or cookie crumbs.
- 90 g plain flour
- 1 tsp baking powder
- ¼ tsp bicarbonate of soda
- ¼ tsp salt
- 2 pc eggs
- 65 g caster sugar
- 120 ml light olive oil
- 120 g sour cream
- 2 pc lemon zest
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 225 g mascarpone
- 40 g powdered sugar
- 1 tsp vanilla extract

Preheat the oven to 175°C/350°F. Line an 20 x 20 cm (8 x 8 inch) baking pan with baking parchment.

In a medium bowl, whisk together the flour, baking powder, bicarbonate of soda and salt. Set aside.

In a separate large bowl, whisk the eggs and sugar for about 1 minute, until light and frothy (use a hand mixer if you like).

Add the vanilla extract, olive oil, sour cream (or Greek yogurt), lemon zest and lemon juice. Whisk until smooth and combined.

Sift the dry ingredients into the wet ingredients and gently fold together with a spatula until just combined; do not overmix.

Tip the batter into the prepared pan and smooth the top.

Bake for 27–28 minutes, or until a toothpick inserted into the centre comes out clean.

Let the cake cool completely before assembling.

For the mascarpone cream: in a bowl, combine the mascarpone, powdered sugar, vanilla extract, salt and lemon zest if using. Mix until smooth and thick. Chill for 15 minutes if needed before piping.

To assemble: once the cake has cooled completely, use a wide paper dessert cup pressed firmly into the cake to cut out individual rounds, then lift each piece out gently.

If desired, carefully slice each cake round in half horizontally to create layers.

Pipe or spread the mascarpone cream onto the cake rounds; if layering, add cream between the layers and on top.

Dip or roll the tops into sprinkles, crushed pistachios, or cookie crumbs until coated.
