Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works →- Step 1
Preheat oven to 200°C. Toss beetroot cubes with 15ml olive oil, salt, and pepper. Spread on a baking tray and roast for 25 minutes until tender and caramelised at edges.
- Step 2
Meanwhile, pat chickpeas dry with kitchen paper. Heat 10ml olive oil in a large frying pan over medium-high heat. Add cumin seeds and toast for 30 seconds until fragrant.
- Step 3
Add chickpeas to the pan and stir-fry for 8–10 minutes, shaking occasionally, until golden and crispy on the outside. Season with smoked paprika, salt, and pepper. Transfer to a plate.
- Step 4
In a small bowl, whisk together red wine vinegar, remaining 5ml olive oil, lemon juice, and a pinch of salt to make a light dressing.
- Step 5
Arrange rocket on a plate. Top with warm roasted beetroot, charred chickpeas, crumbled feta, and pomegranate seeds.
- Step 6
Drizzle dressing over the salad and scatter fresh mint leaves on top. Serve immediately.
