Dirty Soda
A Utah-style dirty soda: chilled Dr Pepper over crushed ice with coconut syrup, fresh lime and a splash of cream, which also works with cola.
- 330 ml Dr Pepper, chilled
- 2 tbsp coconut syrup
- ½ pc lime
- 2 tbsp single cream
- 250 g crushed ice

Fill a tall glass of at least 450 ml to the top with crushed ice. To make it at home, wrap ice cubes in a clean tea towel and bash them with a rolling pin. Small, pebbly ice chills the drink quickly and dilutes it slowly.

Squeeze the lime half over the ice, which gives about 1 tbsp of juice, and drop the squeezed shell into the glass.

Pour the coconut syrup over the ice and stir once to coat it.

Tilt the glass and pour in the chilled Dr Pepper slowly down the side to keep it fizzy, stopping about 3 cm below the rim.
- Step 5
Pour the cream slowly over the back of a spoon so it blooms into cloudy swirls. Give it one or two stirs with a straw and drink straight away. For the original Utah version swap in Diet Coke, and for a less sweet drink start with 1 tbsp of syrup and add more to taste.
