
Flower Cookies
Buttery, vanilla-almond sugar cookies coloured pink and arranged as simple flower shapes for spring.
- 115 g unsalted butter
- 100 g granulated sugar
- 1 pc egg
- 1½ tsp almond extract
- 1 tsp vanilla extract or vanilla bean paste
- 260 g plain flour
- 16 g cornflour
- 6 g fine salt

Line two large baking sheets with parchment paper or silicone baking mats; set aside.

In a large mixing bowl, beat the butter and granulated sugar on medium-high speed for 1-2 minutes until lightened and fluffy.

Add the egg, almond extract and vanilla extract; beat until combined. Scrape down the bowl as needed.

Add the plain flour, cornflour and salt. Mix on low speed until the dry ingredients are just incorporated; scrape the bowl to ensure everything is mixed.
