
Jhal Muri
Jhal muri is a quick Bengali-style snack of spiced puffed rice tossed with crisp vegetables, mustardy flavour and lemon.
- 60 g puffed rice
- 150 g cucumber
- 150 g tomatoes
- 50 g onion
- 1 pc green chilli
- 10 g fresh coriander
- 1 pc lemon
- 1 tbsp mustard oil
- 1 tsp sesame oil
- salt
- mughalai masala
- paprika
- 1 tbsp mango chutney
- chana dal
- mustard seeds
- black pepper
- water

Toast the puffed rice lightly in a dry pan for 1–2 minutes, then tip into a large bowl to cool.
- Step 2
Finely chop cucumber, tomatoes and onion; finely chop green chilli and coriander. Add to the bowl with the puffed rice.
- Step 3
In a small bowl, mix mustard oil, sesame oil, mango chutney, lemon juice and salt to taste. Stir in paprika/masala seasoning (to taste).
- Step 4
Drizzle the spiced dressing over the puffed rice and toss gently until everything is evenly coated. Add a splash of water only if needed to help season.
- Step 5
Taste and adjust seasoning with more lemon juice and salt. Finish with black pepper and extra coriander, then serve immediately.
