Add to a shopping listHow the shopping list works →- Step 1
Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- Step 2
Peel and cube the sweet potatoes into 2cm pieces. Drain and rinse the chickpeas.
- Step 3
Slice the red onion into thin wedges. Mince the garlic cloves.
- Step 4
In a large bowl, toss the sweet potatoes, chickpeas, and red onion with 2 tablespoons of olive oil, cumin, coriander, smoked paprika, salt, and pepper. Ensure everything is well coated.
- Step 5
Spread the mixture in a single layer on a baking tray lined with parchment paper.
- Step 6
Roast for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelised, and the chickpeas are beginning to crisp.
- Step 7
While the vegetables are roasting, prepare the tahini dressing. In a small bowl, whisk together the tahini, lemon juice, water, and a pinch of salt until smooth and creamy. Add more water, 1 teaspoon at a time, if needed to reach your desired consistency.
- Step 8
Once the roasted vegetables are ready, divide them between two bowls.
- Step 9
Drizzle generously with the tahini dressing.
- Step 10
Finely chop the fresh parsley and scatter it over the top.
- Step 11
Serve immediately.
