Viral Sweet Potato with Cheese Recipe Hack
Roasted sweet potatoes are slit and stuffed with butter and mozzarella for a melty, cheesy comfort-food hack.
- 2 pc sweet potato
- ½ tsp olive oil
- ½ tsp kosher salt
- 4 tbsp salted butter
- 55 g mozzarella
- ¼ tsp sea salt flakes
Shop these in one order
Mello puts these ingredients on one shopping list with the rest of your week, and anything two recipes share is added together. The list then goes to Sainsbury's in the UK or Careem Quik in the UAE.
Add to a shopping listHow the shopping list works →- Step 1
Preheat the oven to 400°F (200°C). Poke holes in the sweet potatoes, lightly spray with olive oil, sprinkle with salt, and place on a parchment paper–lined baking sheet.
- Step 2
Bake for about 50 minutes, or until tender—test with a fork.
- Step 3
Once cool enough to handle, cut off one end of each potato. Use a knife to carefully poke a hole lengthwise inside the potato to make room for the stuffing.
- Step 4
Cut one long piece of butter and place it directly on top of one long piece of mozzarella. Sprinkle the butter with a few sea salt flakes if using, then push the butter-and-cheese combo into the potato.
- Step 5
Let the butter and mozzarella melt inside the hot sweet potato. Eat while warm—the cheese will firm up as it cools.
